Having roast chicken for dinner tonight and pressed for time/stumped for ideas? How about simple roasted sweet potatoes, carrots, and onions, slathered in extra virgin olive oil and sprinkled with sea salt and pepper. This one’s on our menu tonight!
What you’ll need (in addition to the organic/pastured chicken):
1 organic sweet potato
2 organic carrots
1 organic onion
2 tbsp EVOO
Slice all the vegetables, arrange on a foil-lined cookie sheet and bake in the oven at 450 (along with the chicken) for about 30 minutes, checking midway, to avoid overcrisping.
