Apple (to) Zucchini Bread
Unsalted butter (for greasing pan)
1 zucchini, finely grated (about 1 cup)
2 apples, peeled cored and grated (about 1 cup)
1 cup packed light brown sugar
1/2 cup safflower oil
1 tsp. vanilla
2 cups whole wheat flour
1/4 tsp salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground nutmeg
1. Preheat oven to 375ºF. Lightly butter a 9-in x5-in loaf pan.
2. In a large mixing bowl, combine zucchini, apple, sugar, oil, eggs and vanilla and stir to combine. Add dry ingredients and mix well.
3. Pour batter into prepared pan and bake until a toothpick inserted in the middle of the pan comes out clean, about 45 minutes. Transfer to a wire rack and allow to cool before slicing.
