This morning I made guacamole with my son’s preschool class. What a fun activity! I cut the avocados in half and the kids scooped out the meat. Next we added chopped tomatoes and cilantro and squeezed in quartered limes. The end product was delicious and everyone had a blast! Here’s the recipe if you want to try it at home.

Guacamole
Did you know that the avocado is a fruit?
3 avocados, halved and pitted
1 tomato, seeded and diced
¼  red onion, finely diced  (about 2 Tbsp.)
½ bunch cilantro, chopped (about 2 Tbsp.)
1/2  lime, juiced
1/4 tsp. salt

Scoop the flesh out of avocado and mash, using a wooden spoon or fork. Do not over mash  — chunks are good! Add the rest of the ingredients and mix well. Serve with tortilla chips or cut up vegetables. Makes about 2 cups.
