As winter blows in, our families have begun spending lots of time indoors. With that in mind, I’ve been compiling a list of good stormy day activities. Recently, my 3 year old had two friends over and we made this healthy one bowl Pumpkin Chocolate Chip Bread (adapted from Honest Mom). It’s made from wholesome ingredients, easy to make (and more importantly, clean up), and the kids (and grown ups) loved it. Try to use organic ingredients when possible, and especially for sugar, dairy, eggs and wheat.

3/4 cup organic coconut palm sugar
1 large egg
1 cup pumpkin puree
1/4 cup unsweetened applesauce
1/4 cup plain Greek yogurt
1 1/2 cups organic white whole wheat flour (you can use plain flour if you want)
1/2 tsp salt
1/2 tsp baking soda
1 tsp pumpkin pie spice
1/2 cup dark chocolate chunks
Wax paper or butter to grease the pan

Preheat oven to 350F. Combine first five ingredients in a large bowl. Whisk thoroughly. Add flour, salt, baking soda, and pumpkin pie spice. Stir until just combined – don’t over-stir. Stir in chocolate chunks. Pour batter into a loaf pan lined with wax paper or coated with cooking spray. Bake for 30-35 minutes, or until a fork inserted in the center comes out clean. After 10 minutes, remove from pan and let cool on a rack.
