Kitchen Sink Side Dish: Quinoa with Kale, Carrots, Beans and Feta

For those nights when you don’t feel like making a side dish from scratch…follow my lead and toss together whatever is in the fridge. A great way to use up leftovers and get dinner on the table in minutes. Last night that meant quinoa, steamed kale, raw carrot sticks, bean salad (chickpeas, great white northerns, and kidney beans), crumbled feta and homemade red wine vinaigrette (red wine vinegar, olive oil, salt and pepper).
My 2 year old isn’t a huge fan of quinoa (he doesn’t like the texture of grains in general), but he loves beans, feta and carrot sticks. And I figure the more often I expose him to quinoa and other grains, the more likely he is to embrace them in the long run.
