Meatless Monday: Homemade Pizza!

(Semi-) homemade pizza makes for a wholesome, nutritious dinner that’s ready in minutes. If you have older kids, let them choose their own toppings and help assemble it with you.
1 whole wheat pizza dough (we love the pre-made one from Whole Foods)
Toppings:
Marinara sauce or pesto
Grated or fresh mozzarella, parmesan, ricotta
Red onions, sliced thin
Roasted peppers, chopped
Broccoli florets and/or spinach leaves
Eggplant, sliced thin
Zucchini or yellow squash, sliced thin
Fresh basil
And any other veggies you have on hand!
Preheat oven to 500 degrees F. Roll out dough and stretch to fit a 14″ pizza pan. Spread with sauce and distribute cheese and other toppings evenly, leaving about 1″ border around the whole pie. Bake for about 10-15 minutes. Remove from oven, allow to cool, and enjoy!
