Crispy Kale Chips
We love kale chips but not the $8+ price tag on most commercially-available packages. This recipe is fool-proof and takes less than 30 minutes start to finish. To save more time, use pre-washed organic kale (available in the bagged/boxed green section at many grocery stores).

1 head organic kale, washed and dried
1 to 2 Tbsp. extra-virgin olive oil
1/4 tsp. salt
2 Tbsp. Parmigiano-Reggiano, optional

Preheat oven to 350ºF.
Remove ribs and tough stems from kale and trim into 2 inch pieces. Toss with olive oil and salt and arrange in single layer on baking sheet. Bake until crispy and edges begin to brown, about 12 to 15 minutes.
Remove from oven and allow to cool. Transfer to a bowl and toss with cheese if using. Makes about 4 cups.
